If there’s one dessert that instantly brings a smile to your face, it’s funfetti cake—and when you combine that colorful joy with the rich, buttery texture of a pound cake, you get something truly magical. This Funfetti Pound Cake is like a celebration in every slice. It’s tender, moist, and packed with rainbow sprinkles that make it perfect for birthdays, holidays, or any time you’re in the mood for something a little extra cheerful. Whether you’re baking it for a party or just because, this cake is guaranteed to brighten your day.

What I love most about this recipe is how simple it is to pull together while still looking like a showstopper. The batter is buttery and dense—true to classic pound cake style And of course, we can’t forget the sprinkles! I recommend using jimmies (the long, thin kind) because they hold their color best without bleeding into the batter. Top it off with a sweet vanilla glaze and a few more sprinkles, and you’ve got a dessert that’s as pretty as it is delicious.

- Preheat oven to 350 F (177C) then coat sprinkles in 1 tablespoon of flour then set aside.
- Combine melted butter, vanilla extract, and buttermilk then stir in eggs one at a time.
- Now in a separate mixing bowl whisk together flour, baking powder, milk powder, sugar, and salt.
- Combine both wet and dry mixtures, add in sprinkles and mix well but be sure not to over-mix.
- Pour batter into a well greased or parchment paper lined 9×5 loaf pan then place in the oven to bake for 50-55 minutes or until a toothpick comes out clean with only a few moist crumbs.
- Allow the cake to rest in the pan for 5 minutes before transferring to a cooling rack.
- Once the funfetti pound cake has fully cooled prepare the glaze.
- Sift powdered sugar and salt into a large mixing bowl then stir in vanilla extract and milk. Add in milk 1 tablespoon at a time until glaze is desired consistency.
- Pour the glaze over pound cake (it will harden as it cools).
Tips
- Only glaze a completely cooled cake, heat will melt the glaze and prevent it from setting properly.
- If glaze is too runny , add more powdered sugar. If glaze is too firm add more milk.
