Ingredients

  • Flour— 1 cup
  • Cocoa Powder— 1/2 cup
  • Espresso Powder— 1 teaspoon
  • 1 Egg, 1 Egg Yolk
  • Vanilla Extract— 1 tablespoon
  • Almond Extract— 1/2 teaspoon (optional)
  • Softened BUtter— 1 stick
  • White Sugar— 1/2 cup
  • Brown Sugar— 1/2 cup
  • Salt— 1 teaspoon
  • Baking Soda— 1/2 teaspoon
  • Sprinkles— 1 cup
  • Chocolate chips— 1/2 cup
  • Chopped White Chocolate— 4 oz

What You’ll Need

  • 9 Inch Springform Pan
  • 1 Large Mixing Bowl
  • Sifter
  • Hand MIxer

How to Make Chocolate Birthday Cookie Pizza

  • First preheat the oven to 350F (177C).
  • In a large mixing bowl use a hand mixer to cream butter and sugar until the mixture is pale and fluffy. Add in eggs then continue to mix thoroughly.
  • Fold in vanilla and almond extracts.
  • Now sift in the flour, cocoa powder, salt, milk powder, espresso powder, and baking soda then fold into the mixture until a batter forms. Add in sprinkles and chocolate chips. Be sure to save some chocolate chips for topping later.
  • Evenly pour the dough into a well greased 9 inch springform cake pan then top with remaining chocolate chips.
  • Bake for 30 to 35 minutes (the cookie pizza will continue to set as it cools).
  • Wait until the the springform pan is cool enough to handle then transfer the cookie pizza to a wire rack to finish cooling.
  • Wait until the cookie pizza has fully cooled before frosting or glazing.
