
The smell of pancakes in the morning always brings me back to my childhood. I’ve carried that same love of pancakes with me into my adult years. Whether it’s eight in the morning or ten at night I can always go for a stack of pancakes!
What I love most about them is they’re the perfect blank slate. From blueberry to chocolate chip, there’s a pancake out there to tickle everyone’s fancy.
These cake batter pancakes are perfect for a birthday breakfast, a special brunch, or a late night snack. No matter what the occasion, these pancakes won’t disappoint. They’re thick and fluffy like a good pancake should be, but have a really unique cake-like taste and texture that make them unforgettable. Not to mention the glazed they’re covered in is like the icing on the cake (no pun intended).
Ingredients:
- All purpose flour ( 1 cup)
- Yellow cake mix ( 1/2 cup)
- Sugar ( 1 tablespoon)
- Baking powder ( 1 tablespoon)
- Salt ( 1/4 teaspoon)
- Two large eggs
- Milk ( 1 1/4 cups)
- Sprinkles (optional)
Glaze
- Powdered sugar ( 2 cups)
- Milk ( 5 tablespoons)
- Vanilla extract ( 1 teaspoon)

Step 1
Combine flour, cake mix, salt, baking powder, and sugar in a large mixing bowl

Step 2
In a separate bowl combine eggs and milk then mix wet and dry ingredients.

Step 3
Pour pancake batter onto hot skillet; cook for five minutes then flip and allow to cook for three more minutes. Repeat process until all batter has been used.

Step 4
Make glaze; combine powdered sugar, milk, and vanilla extract.

Step 5
Pour glaze over pancakes and add sprinkles.
