Nothing says retro deliciousness quite like a classic Upside Down Pineapple cake. This timeless dessert has been a beloved favorite for generations. caramelized pineapple rings and cherries atop a moist, buttery cake make this delicious treat just as appealing to your eyes as it is to your taste buds.

Hence the name ‘Pineapple Upside Down Cake’ the magic happens when you invert the cake after baking, revealing a beautiful and glossy topping. Ingredients:
- Flour (1 1/2 cups)
- Baking Powder (1 teaspoon)
- Salt (1 teaspoon)
- White Sugar (3/4 cups)
- Vanilla Extract (1 teaspoon)
- Two eggs + Two Egg Yolks
- Pine Apple Juice (1/2 Cup)
- Coconut Milk (1/2 cup)
- Vegetable Oil (2 tablespoons)
- Coconut Shreds (1 cup)
Glaze Topping
- Canned Pineapple Slices 20oz
- Brown Sugar (3/4 cups)
- Butter (5 tablespoons)
- Ginger (2 tablespoons) (optional)
- Maraschino Cherries
What You’ll Need:
- 9×13 Baking Pan
- Two Mixing Bowls
- Large Skillet
Recipe
First prepare glaze topping, in a large skillet melt down butter, brown sugar and ginger over medium heat (should take no longer than five minutes). Once glaze is finish Line pineapples and cherries in a well greased baking pan then pour glaze; be sure to save left over juice from canned pineapple’s.

Next mix wet ingredients. In a large mixing bowl combine vanilla extract, 2 eggs + 2 egg yolks, pineapple juice, coconut milk, and vegetable oil.

Now for the dry ingredients; combine flour, boking powder, salt, and white sugar. Then combine both wet and dry mixtures and stir in coconut shreds.


Pre heat oven to 350; pour cake batter into baking pan over glazed pineapples and cherries. Place in oven to bake for 35 minutes. Once cake is finished baking, let cool then carefully flip cake out of baking pan so the the pineapples and cherries are on top and enjoy.
