Easy Birthday Coffee Cake Cookies Recipe with Sprinkles

Ingredients

  • Flour— 1-3/4 cups
  • Butter— 1/2 cup (softened)
  • Brown Sugar— 1/2 cup
  • White Sugar— 1/4 cup
  • 1 Egg, 1 Yolk
  • Vanilla Extract— 1 tablespoon
  • Almond Extract— 1/4 teaspoon
  • Baking Powder— 1/2 teaspoon
  • Baking Soda— 1/2 teaspoon
  • Salt— 1/2 teaspoon
  • Cornstarch— 1 tablespoon
  • Rainbow Sprinkles— 1 cup

Streusel Crumb Topping

  • Flour— 1/2 cup
  • Brown Sugar— 1/4 cup (packed)
  • Cinnamon— 1/2 teaspoon
  • Nutmeg— 1/8 tablespoons
  • Melted Butter— 1/4 cup (cooled)
  • Rainbow Sprinkles— 1/2 cup
  • White Chocolate Drizzle— 1/2 cup

Makes 8 medium sized or 6 jumbo cookies

How To Make Birthday Coffee Cake Cookies

  • First prepare the streusel. In a mixing bowl, combine flour, baking powder, brown sugar, cinnamon, and nutmeg.
  • Slowly pour in the cooled melted butter then mix with a fork until crumbles from. Lightly mix in the sprinkles but don’t overmix or the struesel will turn into a paste instead of a crumble. Set the streusel crumble topping aside while working on the cookie dough.
  • Now for the cookie dough. In a large mixing bowl use a hand mixer to beat together brown sugar, white sugar, and butter until light and fluffy (this should take around 3-4 minutes).
  • Add in the eggs, vanilla extract, and almond extract then continue to mix until smooth and combined.
  • Add in the flour, baking powder, baking soda, cornstarch, and salt then combine. While some white streaks still remain in the flour, use a spatula to fold in the sprinkles until no more white streaks remain.
  • Use a cookie scoop to form cookies using about 2 tablespoons of dough for each then place them on a silicone mat lined cookie sheet.
  • Use the back of a spoon (or your fingers) to make an indent in the middle of each cookie then scoop about about 2 tablespoons of streusel topping in the middle of each of them.
  • Pop the cookies in freezer for 30 minutes before baking.
  • Preheat the oven to 357F then bake cookies for 9-12 minutes (edges will be golden brown). Allow the cookies to set on the cookie sheet for 5 minutes before transferring to a wire rack to finish cooling.
  • Once the cookies are completely cooled, drizzle with melted white chocolate.
