How To Make Double Chocolate S’mores Cookies
- First, in a large mixing bowl, use an electric hand mixer on medium speed to whip butter, white sugar, and brown sugar together until light and fluffy.
- Add in the eggs then continue to mix until well combined.
- Now stir in the vanilla extract then add in flour, cornstarch, cocoa powder, milk powder, espresso powder, baking powder, baking soda, and salt. Fold in ingredients until no more white streaks of flour remain in the batter.
- Use a 2.5 cookie scoop to form 8 balls of cookie dough.
- Flatten each ball of dough then place a marshmallow in the middle of each before rolling them back into a ball, covering the marshmallows in dough.
- Place graham cracker pieces and chocolate chips on top of cookies then refrigerate cookies for an hour.
- Now line a cookie sheet with a silicone baking mat then set 5 cookies evenly spaced apart.
- Bake for 15 minutes at 350F then allow them to cool on a cookie sheet for 10 minutes (the cookies will set as they cool).
- Once the cookies are completely set, enjoy!
