Ingredients

  • Flour— 1-3/4 cups
  • Cornstarch— 1 tablespoon
  • Butter— 1 stick (softened)
  • Baking Soda— 3/4 teaspoon
  • Espresso Powder— 1 teaspoon
  • Milk Powder— 1 tablespoon
  • White Sugar— 1/2 cup
  • 1 egg, 1 yolk
  • Vanilla Extract— 1 tablespoon
  • Salt— 1 teaspoon
  • Sprinkles— 1 cup
  • Chopped Semi Sweet Chocolate— 6oz (1- 1/2 cups of chocolate chips)

  • 9 Inch Springform Pan

How To Make Chocolate Birthday Cookie Cake

  • Preheat oven to 350F.
  • In a large mixing bowl, cream together butter, white, and brown sugars until smooth.
  • Now add in the eggs and vanilla extract then continue to mix.
  • Mix in the flour, cornstarch, espresso powder, baking soda, milk powder, and salt until only a few white streaks of flour remain then fold in the sprinkles and chocolate chunks until completely combined.
  • Now transfer the dough evenly to a well greased 9-inch springform pan then bake for 25 minutes or until the edges are golden brown.
  • Allow the chocolate birthday cookie cake to cool in the pan for an hour before slicing.
