Everyone loves strawberry shortcake— its the kind of dessert that instantly brings to mind warm afternoons, juicy ripe berries, and clouds of whipped cream. These Strawberry Shortcake Blondies take all of those classic flavors and wrap them into one irresistibly soft, buttery bar. Think rich vanilla blondies infused with sweet strawberry flavor, topped with a tender crumb and bursts of fresh berries in every bite. It’s the perfect mashup of a beloved summer dessert and a bakery-style treat you can enjoy any time of year.

What I love most about this recipe is how effortlessly it comes together while still feeling a little special. The blondies bake up thick and chewy with golden edges, while the strawberries add just the right amount of brightness and sweetness.
