Lemon Blueberry Loaf with Lemon Glaze

I absolutely love baking desserts with fresh blueberries in them. It always takes me back to the days when my grandmother would make blueberry muffins. And If your fan of lemon desserts you’ll love this lemon blueberry loaf recipe, it’s packed with that that amazing ‘lemony’ flavor that we can’t get enough of.

This lemon blueberry loaf is so moist it just melts right in your mouth. Not to mention it’s so easy to make that you can whip up a loaf any time the urge hits you. Step 1

In a large mixing bowl, whisk together flour, cake flour, and salt.

Step 2

Combine sugar, eggs, yogurt, vegetable oil, and lemon zest in a separate bowl.

Step 3

Combine wet and dry ingredients; coat blueberries in flour then fold them into mixture. (Be careful not to burst blueberries while mixing.

Step 4

Pour mixture evenly into loaf pan.

Step 5

Pre-heat oven to 350; bake for 45 to 55 minutes, or until toothpick pick comes out clean.

Step 6

While loaf is cooling prepare lemon glaze. Combine powdered sugar, vanilla extract, lemon extract, and milk. You can add more or less milk depending on desired thickness. Start with about two tablespoons, then add more if you prefer glaze to be more thin.

Step 7

Once your lemon blueberry loaf is cooled, cover with lemon glaze and enjoy.
