- Flour- 2 cups
- White Sugar- 2 cups
- Cocoa Powder- 3/4 cup
- Baking Powder- 2 teaspoons
- Baking Soda- 1 teaspoon
- Salt- 1 teaspoon
- Milk Powder- 1 teaspoon
- Cornstarch- 2 tablespoons
- Mayo- 1/2 cup
- 2 Eggs+ 2 Egg Yolks
- Boiling Water- 1 cup
- Milk- 1 cup
- Expresso Powder- 1 teaspoon
- Fresh Strawberries- 1 oz
- Strawberry Jam/Puree- 1/2 cup
- Chocolate Frosting- 2 cups
- Strawberry Frosting – 1 cup

- Nine Inch Cake Pans x2
- 3 Large Mixing Bowls
- Cooling Rack
Recipe
- First, Pour Boiling water into a mixing bowl then stir in expresso powder and cocoa powder. Allow chocolate mixture to fully cool.
- In a separate mixing bowl combine flour, sugar, baking powder, baking soda, cornstarch, milk powder, and salt.
- In a third mixing bowl beat whisk together eggs, milk, and mayo.
- Pour chocolate and dry ingredient mixtures into the egg mixture, alternating between chocolate and dry mixtures. It’s important that you stir slightly after each pour to ensure ingredients are well combined (be careful not to overmix).
- Preheat oven to 350. Distribute batter evenly between two nine inch cake pans and bake for 27 minutes.
- Allow cake layers to cool on drying rack for 15 to 20 minutes or completely cool to the touch.
- Apply a generous layer of strawberry frosting to one of the cake rounds then layer cake. Apply chocolate frosting to side of cake.
- Mix strawberry and jam and chopped strawberries and pour over top of cake.
- Slice and enjoy!
