- 2 Eggs
- Light Brown Sugar— 1-1/2 cup
- Sour Cream— 1/2 cup
- Vegetable Oil— 1/4 cup
- Baking Powder— 1/2 teaspoon
- Baking Soda— 1/4 teaspoon
- Salt— 1 teaspoon
- Cornstarch— 1 teaspoon
- Fresh Raspberry— 1 cup
- Lemon Zest From One Lemon
Streusel Topping
- Flour— 1-3/4 cups
- White Sugar— 3/4 cup
- Butter (melted)— 1 stick
- Salt— 1 teaspoon

How to Make Raspberry Crumb Bars
- Preheat Oven to 350F (177C).
- First, prepare the streusel. In a mixing bowl combine flour, salt, and sugar then mix in cooled melted butter. Stir until crumbles begin to form then set it aside in the fridge.
- Now for the raspberries. In separate mixing bowl, combine raspberries with lemon zest and 1 teaspoon of flour then set aside as you prepare the batter.
- For the batter, start by whisking together oil, eggs, sour cream, and vanilla extract until everything is well incorporated. Then sift in the flour, baking powder, baking soda, cornstarch, and salt. Combine until just mixed (Don’t over do it!).
- Line an 8×8 baking pan with parchment paper then pour in batter and top with raspberries.
- Now top the raspberries with streusel crumble and bake for 35-40 minutes.
- Allow the Raspberry crumb bars to set for at least 30 minutes once they’re out of the oven.
- Slice into 6 healthy rectangular bars and enjoy!
