Ingredients:
- Flour (2 1/2 cups)
- Baking Powder (1 teaspoon)
- Baking Soda (1/2 teaspoon)
- Salt (1/2 teaspoon)
- White Sugar (1 cup)
- Evaporated Milk (1/2 cup)
- Vegetable Oil (1/4 cup)
- Stick of butter (melted)
- Two Eggs
- Vanilla extract (2 teaspoons)
- Chopped Peaches (1 cup)(divided)
Streusel Topping
- All Purpose Flour (1/2 cup)
- White Sugar (6 tablespoons)
- Butter (5 tablespoons)(softened)
- Cinnamon (1 teaspoon)

- Two Large Mixing Bowls
- Sifter
- Cookie Scoop
Recipe
This recipes calls for a cup of chopped peaches, fresh or canned will work just fine. Be sure to save about a quarter of peaches for topping.

While we prepare the batter preheat oven to 350. Mix wet ingredients; in a large mixing bowl combine eggs, vanilla extract, melted butter, and vegetable oil (Don’t mix in evaporated milk just yet, first we’re going to mix in dry ingredients).

Now for the dry ingredients; Sift flour, baking powder, baking soda, salt, and white sugar into wet mixture. Then add evaporated milk and peaches and mix ( Be mindful of overmixing as it can cause muffins to be dry).


In a separate mixing bowl prepare streusel topping. Combine flour, white sugar, softened butter, and cinnamon. Streusel should be the consistency of wet sand.

Use cookie scoop to fill muffin tray (be sure not to fill all way the to top) then top with streusel and peaches. Place muffins in the oven to bake for 30 minutes, let cool and enjoy!
