Ingredients

  • Flour— 1-1/2 cup
  • Baking Powder— 1 teaspoon
  • Baking Soda— 1/2 teaspoon
  • White Sugar— 1 cup
  • Sour Cream— 1/2 cup
  • Vegetable Oil— 1/8 cup
  • 2 Eggs
  • Juice From 2 Lemons (1/2 cup)
  • Ginger Powder— 1 teaspoon (optional)
  • Salt— 1 teaspoon
  • Vanilla Extract— 1 teaspoon
  • Almond Extract— 1/2 teaspoon

Streusel Topping

  • Flour— 1/2 cup
  • White Sugar— 1/4 cup
  • Melted Butter— 3 Tablespoons

  • 2 Mixing Bowls
  • 8×4 Loaf Pan

How to Make a Lemon Crunch Loaf

  • Preheat oven 350F.
  • First, prepare the streusel topping, in a mixing bowl combine flour and sugar. Mix in cooled melted butter until a crumbly texture forms. Set mixture aside and save for later.
  • Now combine the eggs, sour cream, vegetable oil, vanilla extract, and almond extract. MIx until all of the ingredients are well incorporated.
  • Next, sift in the flour, salt, baking powder, baking soda, and sugar. Fold in the ingredients until white streaks disapear.
  • Pour the batter into a well greased 8×4 loaf pan then top with an even layer of that streusel we made earlier.
  • Place the loaf in the oven to bake for about 55 minutes. Let the cake cool then cut into 8 slices and enjoy.
