- 6 Pack Dessert Shells
- Cream Cheese 8oz (room temperature)
- Powdered Sugar— 1/4 cup
- Fresh Blueberries or Blueberry Jam— 1/2 cup
- White Sugar— 2 tablespoons
- Freshly Squeezed Lemon Juice— 1/4 cup
- Lemon Zest— 1 tablespoon
- Vanilla Extract— 1 teaspoon

How To Make Lemon Blueberry Cheesecake Bites
- First prepare the blueberry topping. In a small saucepan cook down fresh blueberries, sugar, lemon juice, lemon zest, and vanilla extract on medium heat. Continue to cook until the blueberries soften and release their juices, this should take about 5 to 7 minutes.
- Take blueberry mixture off the heat and set aside.
- Now for the cream cheese filling. Whisk room temperature cream cheese in a large mixing bowl until light and fluffy.
- Add in powdered sugar then continue to mix.
- Finally assemble the cheesecake bites. Start by scooping about 2 tablespoons of cream cheese into each dessert shell then follow with a scoop of the blueberry mixture. Avoid scooping too much of the juice from the blueberries to avoid the dessert shells from becoming soggy.
- If using store bought blueberry jam then use in place of blueberry mixture.
