These cookies are super soft and cake like. The best part about them is there made from Pillsbury’s Funfetti® Cake Mix so there really easy to make. If the thought of making cookies from scratch gives you anxiety, these Funfetti cake mix cookies are the perfect option for you. The simplicity of these cookies make them a great lunch time baking activity to do with the kids; the hardest part would be keeping them from eating the entire batch!
This recipe is a must have in my arsenal for those times when I’m craving something sweet but can’t afford to the spend my entire afternoon in the kitchen. I always whip up a quick batch of these cookies when family and friends come to visit and they absolutely love them.
Ingredients:
- One box of Pillsbury Funfetti ® Cake Mix
- Two eggs
- Vegetable oil (1/2 cup)
- Vanilla extract (1 teaspoon)
- White chocolate chips (1 cup)
- Cake batter emulsion (2 teaspoons) ( Optional)
What you’ll need:
- One large mixing bowl
- Cookie sheet
- Parchment paper or baking mat
- Cooling rack (optional)
Recipe:
Step 1
Mix eggs, vegetable oil, vanilla extract, and cake batter emulsion in a large mixing bowl, stir until well combined.
Step 2
Add entire box of Funfetti® Cake Mix. Mix until dough is formed then stir in white chocolate chips.
Step 3
Use a spoon to drop cookies onto cookie tray lined with parchment paper (be sure to place at least two inches apart as cookies will spread while baking).
Step 4
Pre-heat oven to 350 then bake for ten minutes; allow cookies to cool for five minutes and enjoy!
