  • Flour— 1-3/4 cups
  • Cornstarch— 1 tablespoon
  • Butter— 1 stick (melted)
  • Baking Soda— 1/2 teaspoon
  • Salt— 1 teaspoon
  • Brown Sugar— 1/4 cup
  • White Sugar— 1/2 cup
  • 1 egg, 1 yolk
  • Lime Juice— 3 tablespoons
  • Vanilla Extract— 1/2 teaspoon
  • Lime Zest— 1 tablespoon
  • Chocolate Chips— 1/2 cup (melted)

How To Make Coconut Lime Cookie Cake

  • Preheat oven to 350F.
  • In a large mixing bowl, whisk together eggs, butter, brown sugar, white sugar, coconut extract, vanilla extract, lime juice, and lime zest.
  • Now Sift in the flour, baking soda, cornstarch, and salt then stir until just combined.
  • Fold in the lime zest and add coconut shreds then scoop the batter into a well greased 9-inch springform pan. Batter will be thick so be sure to form an even top layer.
  • Bake for 32-35 minutes. The cookie will be done when the edges are golden brown.
  • Once the coconut lime cookie cake is out of the oven allow it to completely cool then melt the chocolate chips, pouring the melted chocolate over the center while avoiding the edges.
  • Allow the chocolate to cool for 10 minutes or until set then slice and enjoy.

Tip: when melting chocolate add 1 teaspoon of vegetable or coconut oil for a smoother texture.
