Ingredients

  • Flour- 2-1/4 cups
  • 2 Egg Yolks
  • 1 Stick of Butter (Softened)
  • 1 Ripe Mashed Banana (1/4 cup)
  • Rum Extract 1/2 teaspoon
  • Baking Powder- 1 teaspoon
  • Cornstarch- 1 teaspoon
  • Baking Soda- 1/2 teaspoon
  • Espresso Powder- 1/2 teaspoon
  • Cinnamon- 1/2 teaspoon
  • Nutmeg- 1/4 teaspoon
  • Salt- 1/2 teaspoon
  • Dark Brown Sugar- 1 cup
  • Finely Crushed Walnuts- 1-1/2 cups

Makes about 15 large Banana Bread Cookies.

  • 2 Large Mixing Bowls
  • Parchment Paper
  • Cookie Tray
  • Cooling Rack

How to Make Banana Bread Cookies

  • Pre-heat oven to 400 degress
  • Cream butter and sugar until fluffy. This should take about 2-3 minutes.
  • Add in egg yolks and rum extract then mix until well combined.
  • Stir in flour, baking powder, baking soda, cornstarch, salt, espresso powder, cinnamon, and nutmeg.
  • Refrigerate dough for at least 30 minutes and up to 24 hours.
  • From cookies using about a tablespoon of cookie dough for each cookie then place on a cookie tray lined with parchment paper.
  • Place in the oven to bake for 12 minutes.
  • Let cookies cool on cookie tray for 5 minutes before transferring to cooling rack. Once cookies have fully cooled grab one and get ready to be transported to banana bread heaven.
