Ingredients
- Flour- 2-1/4 cups
- 2 Egg Yolks
- 1 Stick of Butter (Softened)
- 1 Ripe Mashed Banana (1/4 cup)
- Rum Extract 1/2 teaspoon
- Baking Powder- 1 teaspoon
- Cornstarch- 1 teaspoon
- Baking Soda- 1/2 teaspoon
- Espresso Powder- 1/2 teaspoon
- Cinnamon- 1/2 teaspoon
- Nutmeg- 1/4 teaspoon
- Salt- 1/2 teaspoon
- Dark Brown Sugar- 1 cup
- Finely Crushed Walnuts- 1-1/2 cups
Makes about 15 large Banana Bread Cookies.
What You’ll Need
- 2 Large Mixing Bowls
- Parchment Paper
- Cookie Tray
- Cooling Rack

How to Make Banana Bread Cookies
- Pre-heat oven to 400 degress
- Cream butter and sugar until fluffy. This should take about 2-3 minutes.
- Add in egg yolks and rum extract then mix until well combined.
- Stir in flour, baking powder, baking soda, cornstarch, salt, espresso powder, cinnamon, and nutmeg.
- Refrigerate dough for at least 30 minutes and up to 24 hours.
- From cookies using about a tablespoon of cookie dough for each cookie then place on a cookie tray lined with parchment paper.
- Place in the oven to bake for 12 minutes.
- Let cookies cool on cookie tray for 5 minutes before transferring to cooling rack. Once cookies have fully cooled grab one and get ready to be transported to banana bread heaven.
