Ingredients

Coffee Cake

  • 1 stick of butter (browned)
  • Corn Starch- 2 teaspoons
  • Dark Brown Sugar- 1/2 cup (packed)
  • Baking Powder- 1/2 teaspoon
  • 2 Eggs, 1 Yolk
  • Flour- 2 cups
  • Salt- 1 teaspoons
  • White Sugar- 1-1/2 cups
  • Cinnamon- 1 teaspoon
  • Vanilla Extract- 1 tablespoon
  • Almond Extract- 1/2 tablespoon

Banana Filling

  • 4 Mashed Ripe Bananas
  • Dark Brown Sugar- 1/8 cup
  • Cinnamon- 1 tablespoon
  • Nutmeg- 1/2 teaspoon
  • Allspice- 1/8 teaspoon

Streusel

  • Browned Butter- 1 cup
  • White Sugar- 1-1/2 cups
  • Flour- 2 cups
  • Cinnamon- 2 teaspoons

  • 3 Large Mixing Bowls
  • 8×8 Inch baking Pan
  • Parchment Paper

Recipe

 Prepare the Streusel

  • In a mixing bowl, combine the browned butter, white sugar, flour, and cinnamon.
  • Mix with a fork or your hands until clumps form and the mixture is crumbly.
  • Set aside.

Make the coffee cake batter

  • In a large mixing bowl, combine the browned butter, white sugar, and dark brown sugar.
  • Add the eggs, yolk, vanilla extract, and almond extract, mixing well.
  • In a separate bowl, whisk together the flour, cornstarch, baking powder, salt, and cinnamon.
  •  Gradually add the dry ingredients to the wet mixture, mixing just until combined. The batter will be thick.

Make the banana filling

  • Mash the bananas for the filling and mix in dark brown sugar, cinnamon, nutmeg, and allspice until evenly combined. (Clumps are ok)

Assemble the coffee cake

  • Preheat your oven to 350°F (175°C). Grease a 8×8 -inch baking pan or line it with parchment paper.
  • Spread half of the coffee cake batter evenly across the bottom of the prepared pan.
  • Pour the banana filling over the first layer of batter, spreading it evenly.
  •  Gently pat the remaining batter on top of the banana filling.
  • Sprinkle the streusel topping generously over the entire surface.

Bake

Bake in the preheated oven for 45 minutes, or until a toothpick inserted into the center comes out clean.
