Banana nut muffins are a staple at any decent café or bakery. With this recipe you can get that same quality without leaving the comfort of your own home. These muffins have always been a personal favorite of mine and they’re so easy to make.
Perfect for a brunch or an afternoon snack, the hardest part about making them will be getting your family to believe they aren’t store brought. Once they bite into these moist and nutty muffins they’ll be begging for more. Plus these muffins are whole wheat so they’re a good way to sneak some grains into your children’s diet (wink wink).

What You’ll Need:
Ingredients:
- 3 bananas
- White sugar ( 1/2 cups)
- 1 large egg
- Vegetable oil ( 1/3 cups)
- Whole wheat flour ( 1 1/3 cups)
- Baking powder ( 1 teaspoon)
- Baking soda ( 1 teaspoon)
- Salt ( 1 teaspoon)
- Cinnamon ( 1 teaspoon)
- Chopped walnuts ( 1 cup)
- Brown sugar ( 3/4 cups)
- (optional) Butter Vanilla emulsion ( 1 teaspoon)
Streusel
Recipe:
Step 1
Combine flour, baking powder, baking soda, salt, and cinnamon in large mixing bowl.

Step 2
Combine mashed bananas, butter vanilla emulsion, cinnamon, egg, and oil in a separate bowl.

Step 3
Combine both mixtures and and stir in chopped walnuts, be careful not to overmix batter.

Step 4
Make streusel; combine flour, cinnamon, and butter softened to room temperature; final texture will be crumbly. TIP: Add more butter if streusel is to dry and add more flour if streusel is to wet

Step 5
Line muffin tin with cupcake liners and pour in batter; be sure to not fill all the way to the top as muffins will rise slightly. Sprinkle streusel over top, evenly coating the top of each muffin.

Step 6
Pre heat oven to 350, bake for 25 minutes then allow them cool; enjoy!
