  • 1 Egg
  • White Sugar— 1 cup
  • Melted Butter— 3/4 cup
  • Salt— 1 teaspoon
  • Baking Powder— 2-1/2 teaspoons
  • Cornstarch— 1 tablespoon
  • Almond Extract— 1 tablespoon
  • Sliced Almonds— 1/2 cup

Strawberry Cheesecake Filling

  • Strawberries— 1/3 cup (mashed)
  • Powdered Sugar— 2 cups
  • 2 Egg Yolks
  • 8 oz Cream Cheese (softened)
  • Cornstarch— 2 teaspoons
  • Salt— 1/2 teaspoon
  • Strawberry Extract— 1/2 teaspoon

How To Make Strawberry Gooey Butter Cake

  • Preheat oven to 350F.
  • In a large mixing bowl, whisk together melted butter, sugar, egg, and almond extract.
  • Sift in the flour, cornstarch, baking powder, and salt then use a sputula to fold in the dry ingredients until a thick dough forms.
  • Scoop dough evenly into a well greased 9 Inch spring from pan then set aside.
  • Now for the strawberry cheesecake filling. In a separate mixing bowl, whisk together cream cheese and egg yolks until well combined.
  • Sift in the powdered sugar, cornstarch, and salt then fold in the mashed strawberries and strawberry extract. Mixture should be smooth without lumps.
  • Pour the strawberry cheesecake filling evenly into the springform pan over the cake batter then top with sliced almonds.
  • Bake for 40 minutes. The edges will be golden brown and the cake will have a jiggly center. The Strawberry Gooey Butter Cake needs to set in the fridge to chill and firm for an hour.
