Shortbread Crust

  • Flour— 1-1/4 cups
  • Butter— 1/2 cup (softened)

How To Make Strawberry Coconut Bars

  • Preheat oven 350F.
  • In a large mixing bowl, cream butter and sugar until pale then fold in flour and cornstarch until forms dough forms.
  • In a well greased 8×8 pan press dough into an even smooth layer then bake for 10 minutes and set aside.
  • Now for the coconut topping. In a sperate large bowl, combine eggs, shredded coconut flakes, flour, baking powder, and coconut extract.
  • Now assemble the strawberry coconut bars. Dollop strawberry jam on top of crust but avoid edges to keep them from burning. The heat from the baking process will spread out the jam.
  • Top with coconut topping layer then bake for 30 minutes. Allow the strawberry coconut bars to rest on counter for 15 minutes before refrigerating for at least an hour. The longer the bars have to set the neater the slices will be.
