Ingredients

  • Flour— 2-1/4 cups
  • Natural Cocoa Powder (not processed)— 3 tablespoons
  • Sugar— 1 cup
  • Red Velvet Emulsion— 1 tablespoon
  • 1 Egg, 1 Egg Yolk
  • Sour Cream— 1/2 cup
  • Melted Butter— 4 tablespoons
  • Baking Powder— 1-1/2 teaspoons
  • Baking Soda—1/4 teaspoon
  • Cornstarch— 1 teaspoon
  • Salt— 1/2 teaspoon
  • Cream Cheese Frosting— 1 cup

How to Make Red Velvet Sandwich Cookies

  • Pre-heat oven to 350F.
  • In a large mixing bowl combine eggs, butter, sour cream, and red velvet emulsion.
  • Next, sift in the baking powder, baking soda, cornstarch, salt, sugar, and flour. Fold dry ingredients into the wet mixture until just combined.
  • Line a cookie tray with parchment paper then form cookies using about 2 tablespoons of dough. Place cookies on the cookie sheet allowing about two inches of space so they don’t spread into each other.
  • Bake cookies for 13 minutes then allow them to cool.
  • Once they have fully cooled, apply an even layer of cream cheese frosting to the flat side of the cookies and form sandwiches.
