The holiday season is upon us again. There’s no better way to kick off the holidays then a batch of pumpkin muffins. My family loves these muffins, they’re packed with that classic pumpkin spice flavor we all love in the fall season. Don’t worry theses pumpkin muffins are super easy to make, you’ll be sending your taste buds to pumpkin spice heaven in no time.

Ingredients:
- Cake flour (1 3/4 cups)
- Baking powder (1 teaspoon)
- Baking soda (1 teaspoon)
- White sugar (3/4 cups)
- Brown sugar (1/2 cup packed)
- Greek yogurt (1/2 cup)
- 1 egg
- 15 oz can of pumpkin puree
- Pumpkin pie spice (2 teaspoons)
- White chocolate chips (1 cup) (optional)
- Vanilla extract (1 teaspoon)
- Evaporated milk (1/4 cup)
- Salt (1 teaspoon)

Step 1
Use a hand mixer to mix egg, yogurt, pumpkin puree, vanilla extract, evaporated milk in a large bowl.

Step 2
Combine cake flour, white sugar, salt, brown sugar, baking powder, baking soda and pumpkin pie spice in a separate bowl.

Step 3
Combine wet and dry ingredients then add white chocolate chips (be sure to mix thoroughly).

Step 4
Line muffin tin with cup cake liners pour in pumpkin muffin batter (be sure to not fill all the way to the top as muffins will rise).

Step 5
Pre heat oven to 375, bake for 45 minutes. Check if muffins are fully cooked by sticking with a fork, fork should come out clean. Allow pumpkin muffins to cool then enjoy!
