- 16 Graham Crackers (2 sleeves)
- 8oz Cream Cheese
- 15oz Pumpkin Puree
- 8oz whipped Topping (divided in half)
- Vanilla Extract— 1 tablespoon
- Powdered Sugar— 1/4 cup
- Brown Sugar— 1/4 cup (packed)
- Salt— 1/2 teaspoon

How to Make Pumpkin Icebox Cake
- In a large mixing bowl, beat cream cheese on medium speed until light and fluffy. Add in powdered and brown sugars then mix until well combined.
- Use a spatula to fold in pumpkin puree, half of the whipped topping, vanilla extract and salt.
- Start with a bottom layer of graham crackers in an 8×8 baking pan then top with an even layer of the pumpkin cream cheese mixture. Top with more graham crackers and continue to layer until the pumpkin mixture is done (you should have about 3 layers).
- Top the pumpkin icebox cake with an even layer of the remaining whipped topping then cover with plastic wrap before chilling for four hours or overnight.
