
These pumpkin cupcakes are absolutely delicious. The best part about this pumpkin cupcake recipe is that it uses boxed cake mix and only requires one bowl. But don’t worry these pumpkin cupcakes are certainly not lacking in flavor. Super moist and full of spices these pumpkin cupcakes won’t disappoint.

This pumpkin cupcake recipe is perfect for any holiday event. No one will believe they aren’t store brought. I’m always excited for the cold months to roll around so I can indulge in pumpkin flavored snacks and treats. The taste of pumpkin around the holidays always takes me back to my childhood; my mother would bake a pumpkin bread every year on Thanksgiving and Christmas day. I’ve never been one to break tradition, especially when it tastes so yummy.
For me, these pumpkin cupcakes check all the boxes: super moist, full of spices, covered and filled with cream cheese frosting (because everybody loves cream cheese frosting), and last but not least full of that pumpkin flavor that I’m obsessed with. Ingredients:
Pumpkin Muffins
- One box of yellow cake mix
- White sugar (1/4 cups)
- Vegetable oil (1/2 cup)
- Heavy whipping cream (1/4 cup)
- 3 eggs
- 1 egg yolk
- 15oz canned pumpkin puree
- Ground cinnamon (1 1/2 teaspoons)
- Ground nutmeg (1 teaspoon)
- Ground all spice (1 teaspoon)
- Ground ginger (1/2 teaspoon)
Cream Cheese Frosting
- Butter (1/2 cups)(softened)
- 8oz Cream cheese (softened)
- Vanilla extract (1 teaspoon)
- Powdered sugar (4 cups)
What You’ll Need:

Step 1
In a large mixing bowl combine cake mix, sugar, oil, heavy whipping cream, eggs, cinnamon, nutmeg, all spice, and ginger.

Step 2
Stir in can of pumpkin puree.

Step 3
Line muffin tin with cupcake liners, use cookie scoop to scoop batter into muffin tin.

Step 4
Pre heat oven to 350, bake pumpkin cupcakes for 30 minutes. Allow cupcakes to cool before frosting.

Step 5
Prepare frosting; use hand mixer to combine cream cheese and butter, mix until fluffy. Then add vanilla extract and sugar and continue to mix until smooth.
