Ingredients

Graham Cracker Crust

  • Graham Cracker Crumbs— 2-1/2 cups
  • Butter— 6 tablespoons (melted)
  • Vanilla Extract— 1 tablespoon
  • Apple Pie Spice— 1 teaspoon

Apple Topping

  • 4 Medium Gala Apples (diced)
  • White Sugar— 1/4 cup
  • Butter— 3 tablespoons
  • 10 Soft Caramel Candies
  • Apple Pie Spice— 1 teaspoon

Cheesecake

  • 16oz Cream Cheese (Softened)
  • 8oz container of Whipped Topping
  • White Sugar— 1 cup
  • Salt— 1 teaspoon
  • Vanilla Extract— 1 teaspoon

  • 9 Inch Springform
  • Hand Mixer
  • Mixing Bowl

How To Make Caramel Apple Cheesecake

  • First prepare the graham cracker crust. In a large bowl, combine graham cracker crumbs, vanilla extract, and apple pie spice. Now slowly pour in the butter and continue to mix until it forms a sand-like texture. If the crumbles are too dry, add water one tablespoon at a time until the mixture comes together.
  • Transfer the mixture to a well greased springform pan then form the crust by tightly packing the crumb mixture down into the bottom of the pan. Place crust in the freezer for 30 minutes to set.
  • Now prepare the apple topping. Cook down the apples, sugar, butter, caramel candies, and apple pie spices in a small saucepan. Cook the mixture until the apples soften and all other ingredients have melted down together (should take about 10 minutes).
  • Pour the apple mixture into a small bowl and allow it to cool completely. Spoon the apples out into a separate bowl, the sauce left over is the caramel.
  • Now for the cheesecake. Use an electric mixer to beat together the cream cheese bricks and sugar until light and fluffy. Add in whipped topping, vanilla extract, salt, and apple pie spices then continue to beat until the mixture is smooth and creamy.
  • Evenly scoop cheesecake into the springform pan over the graham cracker crust then top with the apples. Chill for at least 8 hours.
  • Once you’re ready to serve, pour caramel over top then slice and enjoy.
