Not only are these Lemon Cool Whip Cookies delicious but they’re super easy to make. Instead of making batter from scratch this recipe uses boxed lemon cake mix which not only makes baking these cookies a breeze but also adds to the pillowy, cake-like texture. Ingredients:
- Lemon Boxed Cake Mix
- 1 Egg
- 8oz Cool Whip
- Lemon extract (1 teaspoon)
- Powdered Sugar
What You’ll Need:
- Cookie Scoop
- Cookie Tray
- Large Mixing Bowl
- Parchment Paper or Baking Mat
How to Make Lemon Cool Whip Cookies
In a large mixing bowl combine lemon cake mix, egg, cool whip, and lemon extract; then refrigerate for 30 minutes.

Use a cookie scoop to form cookies and coat in powered sugar before placing on a cookie tray lined with parchment paper (be sure not to place cookies to close to each other).

Preheat oven to 350 and bake for 10 to 12 minutes (allow an extra 5 to 10 minutes for bigger cookies). Allow cookies to cool on a cooling rack and enjoy.
