Lemon Bars

Ingredients:

Shortbread Crust

  • Melted Butter (1 cup) (softened)
  • Flour (2 cups)
  • Salt (1/2 teaspoon)
  • Sugar (1/2 cup)
  • Vanilla Extract (1 teaspoon)

Lemon Filling

  • Lemon Juice (1/2 cup)
  • 1 Lemon
  • 4 Eggs + 1 Egg Yolk
  • Sugar (1 1/4 cups)
  • Flour (1/4 cup)

  • 9×9 Baking Pan
  • Food processor
  • 2 Mixing Bowls

How to Make Lemon Bars

Shortbread Crust

We’re going to start with the shortbread crust, first preheat oven to 325 then mix melted butter, flour, salt, sugar, and vanilla extract in a food processor until dough forms. Spread dough into even layer in baking pan lined with parchment paper then bake for 25 minutes or until edges have lightly browned.

Lemon Bar Filling

In a large mixing bowl stir together lemon juice, eggs, sugar, flour, and zest from one lemon. Pour over crust while still warm then carefully place back into oven for another 25 to 30 minutes.

Allow Lemon bars to firm at room temperature for 1 to 2 hours then place in fridge for another 1 to 2 hours as they’re best served chilled.
