Ingredients:
- All Purpose Flour (1/2 cups)
- Baking Powder (1 teaspoon)
- Baking Soda (1/2 teaspoon)
- Salt (1/2 teaspoon)
- White Sugar (1 cup)
- Vegetable Oil (1/4 cup)
- Melted Butter (1 cup)
- Lemon Juice (2 tablespoons)
- Milk (1/2 cup)
- Vanilla Extract (2 teaspoons)
Glaze
- Powdered Sugar (1 cup)
- Lemon Juice (1 tablespoon)
- Milk (2 tablespoons)
What you’ll Need:
- 9×5 Baking Pan
- 2 mixing bowls
Recipe
First mix dry ingredients. In large mixing bowl combine flour, baking powder, baking soda, salt, and white sugar.

Now for the wet ingredients. In a separate mixing bowl combine vegetable oil, melted butter, lemon juice, milk, and vanilla extract.

Combine both wet and dry mixtures then pour into a well greased baking pan. Pre heat oven to 350 and bake for 35 minutes.


Allow lemon loaf to completely cool before preparing glaze. The glaze topping will harden if not used immediately and will melt if loaf is to hot.
To prepare glaze simply combine a cup of powdered sugar with a tablespoon of lemon juice then stir in 2 tablespoons of milk. For a more runny glaze add more milk a tablespoon at a time. Once glaze is prepared, spread evenly and enjoy.
