Coconut Brownies

Ingredients

  • 3 Eggs, 1 Yolk
  • Flour— 1 cup
  • Cocoa Powder— 1/2 cup
  • Coconut Oil— 1 cup (melted)
  • White Sugar— 1-1/4 cups
  • Brown Sugar— 1/4 cup
  • Vanilla Extract— 1 tablespoon
  • Salt— 1 teaspoon
  • Espresso Powder— 1 teaspoon
  • Milk Powder— 1 teaspoon

Coconut Filling

  • Sweetened Coconut Shreds
  • 1 Egg
  • Sweetened Condensed Milk— 2/3 cups

How To Make Coconut Brownies

  • Preheat oven to 350F.
  • First prepare the coconut filling. In a large mixing bowl, combine coconut shreds, eggs, and sweetened condensed milk then set aside.
  • Now for the brownie batter. In a separate mixing bowl, whisk together coconut oil, white sugar, and brown sugar until light in color.
  • Add in the eggs one at a time, whisking after each addition then add in the flour, cocoa powder, salt, milk powder, and espresso powder. Fold in the dry ingredients until batter is smooth.
  • In a well greased 8×8 brownie pan, pour in half of the brownie batter then top evenly with the coconut filling.
  • Top with the remaining brownie batter then bake for 35 minutes or until edges are completly set.
  • Allow the brownies to cool in the pan for 15 minutes before transferring to a cooling rack to cool completely then slice and enjoy.
