Ingredients

  • Flour— 1-1/2 cup
  • Brown— 1 1/2 cup
  • 1 Egg, 1 Yolk
  • Brown Butter (1 stick)
  • Shredded Carrots— 1 cup
  • Pecans— 1/2 cup (chopped)
  • Salt— 1 teaspoon
  • Cinnamon— 1 teaspoon
  • Ground Ginger— 1 teaspoon
  • Nutmeg— 1/2 teaspoon
  • Vanilla Extract— 1 tablespoon

White Chocolate Glaze

  • White Chocolate Chips— 2 cups
  • Whole Milk— 1/2 cup
  • Butter— 1 tablespoon

What You’ll Need

Recipe

  • Preheat 350F.
  • In a large mixing bowl, whisk together eggs, brown sugar, vanilla extract, brown butter, cinnamon, nutmeg, ground ginger, and salt.
  • Now fold in the flour until only a few white streaks remain.
  • Transfer the batter to a well greased 8×8 baking pan in an even layer then bake for 30 minutes or until a toothpick comes out clean.
  • Allow the cake to cool completely in the pan (should take about 30 minutes).
  • Now for the white chocolate glaze. Microwave the whole milk for 1 minute then stir in the white chocolate chips until they are completely melted in. If the chocolate hasn’t fully melted continue to microwave for 10 second intervals, stirring in between each interval.
  • Once chocolate is slightly cooled, pour evenly over the blondies then allow them to set until firm.
