- Unsweetened Coconut Shreds— 1 cup & 1/4 cup for rolling
- White Chocolate Chips— 1-1/2 cups

How to Make Coconut Oatmeal Cookies
- First preheat the oven to 350F.
- Use a hand mixer to cream butter and sugar in a large mixing bowl, this should take about 2-3 minutes.
- Stir in the eggs one at a time then mix in vanilla and coconut extracts.
- Now sift in the four, salt, ginger powder, baking soda, baking powder, milk powder, and cornstarch then mix until well combined.
- Next, fold in the white chocolate chips, coconut shreds, and oats.
- Form the the cookies using about 1-1/2 tablespoons of dough for each then roll the cookies in more coconut shreds so the outside of the dough balls are covered.
- Place the cookies on a cookie sheet lined with parchment paper at least 2 inches apart then put them in the oven to bake for 13-15 minutes.
- Allow cookies to cool on the cookie sheet and enjoy!
