- 15oz Strawberry Cake Mix
- 2 Eggs (room temperature)
- Vegetable Oil— 1/2 cup
- Strawberry Extract— 1 teaspoon
- Vanilla Extract— 1/2 teaspoon
- Melted Chocolate Chips— 1 cup

How To Make Chocolate Covered Strawberry Cookies
- Preheat oven to 350F.
- First, prepare the cake mix. In a large mixing bowl combine the strawberry cake mix, eggs, vegetable oil, strawberry extract, and vanilla extract.
- Line a cookie sheet with a silicone baking mat then use a cookie scoop to form cookies, using about 1.5 tablespoon of dough for each. Be sure to place cookies about 2 inches apart.
- Now bake the cookies for 10 minutes then allow them to cool.
- Melt the chocolate chips once the cookies have completely cooled and be sure to work quickly.
- Pour the melted chocolate into a wide and shallow dish (I used a measuring cup) the dip each cookie halfway before placing them directly onto a cooling rack to allow chocolate to set. This should take about 10 minutes.
